Chipotle Potato Stackers | Tailgating Recipe

One of my favorite Tailgate Recipes with just the right amount of crunch and spicy kick to it. Perfect as a single dish by itself of served with your favorite Tailgate recipe! Klondike Rose Potatoes are simply delicious when cooked this way!
Ingredients
  • 4 medium Klondike RoseĀ® potatoes, sliced on mandolin
  • 2 tbsp. olive oil
  • ½ tsp. salt
  • 1 whole Chipotle Pepper packed in Adobo sauce
  • 2 tsp. Adobo sauce
  • 1 clove garlic
  • 1 tbsp. grated lime zest
  • 1 tbsp. fresh lime juice
  • 2 tbsp. fresh chopped cilantro
Instructions
  1. Slice potatoes thinly and soak them in water to prevent browning.
  2. Preheat the grill with the kettle pizza accessory to a temperature of 325 F to 350 F.
  3. Spread the potato slices over the pizza pan lined with aluminum foil.
  4. Drizzle olive oil and season with salt.
  5. Stack two to 3 slices over each other.
  6. Place it in the grill and let it cook for about 45 minutes.
  7. Meanwhile, prepare a sauce by mixing together adobo sauce, chipotle peppers, lime zest, lime juice and cilantro.
  8. Set aside.
  9. When the potatoes are done, place one stack over the serving dish.
  10. Spread the sauce and layer with another stack.
  11. Spread some more sauce on top.
  12. Garnish with cilantro.
  13. Place some lemon wedges on the side and serve.
