All the Trimmings Thanksgiving Meatloaf

One grill/oven, one cast iron pan and all of the trimmings in one serving, hence the creation of my “All the trimmings Meatloaf”. My simple, savory and filling, one dish Turkey dinner. Just add gravy! A perfect solution for the big game tailgate party with your friends or any event that requires simplicity to maximize your family time.
Ingredients
  • 20 oz ground turkey meat
  • 8oz ground sausage
  • ½ package of onion soup mix
  • 1 tbs Dalmatian sage
  • ½ tsp ground rainbow pepper
  • 1 egg
  • ½ cup bread crumbs
  • ½ cup sweeten dried cranberries
  • 1 cup ready made stuffing mix
  • 2 c mashed potatoes
  • 1 cast iron loaf pan or equivalent
  • wax paper
Instructions
  1. Mix together the ground turkey, ground sausage, onion soup mix, sage, pepper, egg and bread crumbs until well blended.
  2. Spread meatloaf mixture on a sheet of wax paper into a rectangular shape no wider than your loaf pan and about 12” long.
  3. Spread the cranberries onto the center of the meatloaf in a line across the shortest width.
  4. Spread the dressing on top of the cranberries.
  5. Carefully roll one side of the meatloaf towards the center using the wax paper to help keep the meat together.
  6. Roll the other side across to meet at the top of the loaf.
  7. Gently press the seams together to make a round log with the stuffing and cranberries in the center. No need to close up the ends.
  8. Spray loaf pan with a light coating of spray oil.
  9. Place the meatloaf into the loaf pan, sen side down and press into place so the loaf is fairly flat on the top.
  10. Spread your mashed potatoes over top top of the meatloaf to cover.
  11. Bake at 350° F till the center reaches 165° F.
  12. Serve with your favorite vegetable side and gravy.
  13. Note: If using a grill, set it up for indirect heat.
