Chocolate Macadamia Nut Ice Cream

Serves: 6 cups
- 6 egg yolks
- ½ sugar
- 1 cup table sugar
- 1 cup table cream (half & half)
- 1 cup milk
- 4 oz. semi-sweet chocolate
- 1 cup whipping cream
- 1 pinch salt (optional)
- 1 tsp. vanilla
- 5 oz. macadamia nuts, chopped
- Beat egg yolks in a bowl; beat in sugar.
- Heat the table cream and milk in a pan over medium heat.
- Melt the chocolate over low heat.
- When milk is hot, mix a small amount into chocolate and stir until blended.
- Repeat with small amounts of milk until all milk is added.
- Add hot milk/chocolate mix into eggs slowly, stirring as you add.
- Cool in refrigerator.
- Add whipping cream, vanilla and salt, mix throughly.
- Chop macadamia nuts.
- Freeze in ice cream maker.
- When almost frozen, add macadamia nuts.
