Grilled Bacon-Wrapped Chicken Recipe

How to make Grilled Bacon-Wrapped Chicken Recipe
Ingredients
2 tbs olive oil
2 tbs lime juice
1/4 tsp ground coriander
6 chicken breast fillets
4 tbs fruit chutney
3 tbs chopped pecan nuts
6 slices bacon
Preparation
Mix together the oil, lime juice, coriander, salt and pepper.
Mix together the chutney and nuts.
Using a sharp knife, cut a pocket in the thickest section of each filet.
Spoon 1 tbs of the mixture into each chicken breast pocket.
Turn the tapered ends of the fillets to the underside.
Wrap a bacon slice around each fillet to enclose the filling and secure with a toothpick.
Put the chicken parcels on a hot, lightly oiled barbecue grill, flatplate, or the Island Grillstone for best results.
Cook for 5 minutes on each side, or until cooked through, turning once.
165°F internal temp
Note: On the Island Grillstone – no flipping required.
Brush with the lime juice mixture several times during the cooking and drizzle with any leftover lime juice mixture to serve.
Variation: This recipe also works well with prosciutto, which is an Italian equivalent of bacon.
