Grilled Halibut with Lemon Caper Sauce Recipe | Island Grillstone
Here is a delicious and oh so easy grilled halibut recipe. Rubbed with fresh dill, grilled on the Island Grillstone and drizzled with a light refreshing lemon – caper sauce.

Hey, everyone, today we’re making grilled halibut with a lemon caper dill sauce on the Cooking Everything Outdoors show.
So, just a couple of quick points before we get started, this halibut is sustainably harvested.
I received it from www.GreensburyMarket.com.
They have a lot of great organic, sustainable food products there, meats and fish and poultry also.
And we’re also going to be cooking this on the round Island Grillstone.
So let’s get started and go over our ingredients.
You’ll need 4 halibut fillets.
See, these beautiful halibut here.
For our dressing, you’ll need a couple of medium lemons.
And I’ve just cut those in half and trimmed the ends off.
4 tablespoons of extra virgin olive oil and that’s divided.
This is 3 here and then I have 1 here.
1 tablespoon of capers.
1 tablespoon finely chopped chives, 1/4 teaspoon of kosher salt and a 1/4 teaspoon of fresh ground black pepper.
For our rub, you’ll need 1 teaspoon of granulated onion, 1 teaspoon finely chopped fresh dill, 1/2 a teaspoon of kosher salt and a 1/4 teaspoon of freshly ground black pepper.
So one of the first things we need to do after we’ve preheated the Island Grillstone is get our lemons ready for the dressing.
We need to put a little bit of oil on the surface, that’s going to go down on the grill.
Our Island Grillstone is really hot.
I’ve pre-oiled it a little bit.
And we’re just going to grill this up and caramelize them to release all that sweetness that the lemons have.
Okay, so after a few minutes, that’s what we’re looking for, pull these off.
We’re going to let them cool off.
Let’s put our dressing together.
We ended up with just a little over a tablespoon of lemon juice after I’ve squeezed out the cooked lemons and ran it through sip to get most of the stuffers out of there.
Add our oil, that’s 3 tablespoons extra virgin olive oil, our chives, and our yummy capers.
And that is our sauce for our halibut.
Now, we just need to put a rub on our halibut and get that grilled.
So let’s put our rub together.
We have our salt and pepper, our granulated onion, and our dill, fresh, fresh, fresh.
And that looks good.
Now, for our halibut, you could see how beautiful these are.
They’re just… ah, just gorgeous.
So I just want to add a little bit of olive oil to all sides, and we’ll just do this the old-fashioned way, get these all coated up.
So let’s get our rub on these.
Just a little bit on each one.
Okay.
We’re ready for the grill.
So, now the moment of truth.
Let’s get these on the grill.
Oh, that looks fantastic.
These will not take long to cook.
Alright, these are cooking very, very fast.
Caramelized on one side, browning up nicely, just beautiful.
I’m really happy with the way that looks.
Let’s get this off the grill and see how pretty that is.
Look at that.
Okay, let’s plate this up.
One beautiful piece of halibut here.

Well, is that fancy schmancy or what?
Let’s take and drizzle our sauce on there.
