Blackberry Chipotle Marinated Tri-Tip
It's rare when I marinade a Tri-Tip, it's normally a rub only meat for me but inspiration strikes and you have to run with it. Fresh Blackberries, Chipolte Garlic Sauce and a few other items where dancing through my head to inspire me to create this delicious marinade. Of course I had to use one of my favorite sauces from my friends at All Spice Cafe, they sent me that wonderful Chipotle Garlic Sauce that I put on just about everything now.

Ingredients
1 Tri-Tip roast trimmed
16 oz. Fresh or frozen Blackberries
1/2 c All Spice Cafe Chipotle Garlic Sauce
3/4 c Honey
1 cup Chardonnay wine
3 tbsp Apple Cider Vinegar
1 tbsp Kosher Salt
1/4 tsp minced garlic
1 tbsp sugar
Preparation
Place approximately 2/3 of the Blackberries, 1/2 Chardonnay wine in a pan over high heat and bring to a boil. Mash Blackberries to a puree and remove from heat when done. Strain out the seeds, add honey, vinegar, salt, chipotle garlic sauce and rest of wine. Mix well and let cool in refrigerator.
Pour 3/4 of the sauce over a trimmed Tri-Tip roast (use a plastic zip-lock bag for this) marinate in the refrigerator for up to twenty four hours. Add the remaining Blackberries, to the leftover sauce add 1 tbsp sugar to mixture and refrigerate. This will be your topping sauce when the food is done!
Grilling
Sear for about 5 minutes on each side then remove to indirect heat. Cook till the internal temperature reaches 140°F for medium rare and 155°F for medium. Remove and tent with aluminum foil for ten minutes. This will allow the juices to re-permeate the meat and raise the temperature by another 5°F.
Slice across the grain in 1/8 to 1/4 inch slices, pour remaining sauce of your Tri-Tip and serve.
