Grilled Asparagus with Panko
Here's an easy grilling recipe for Asparagus that I threw together one night. It makes a great side dish to any BBQ entrée you are grilling or as a delicious appetizer with some marinade as a dipping sauce.
Ingredients
1lb asparagus – washed and the ends snapped off
1/2 cup olive oil
2 tablespoons fresh lemon juice
pinch of pepper, salt and cayenne
1/2 cup Panko crumbs
Preparation
This is the simplest of dishes to prepare! Mix olive oil, lemon juice, cayenne, salt and pepper together and coat asparagus liberally. Let set for 30 minutes and sprinkle the Panko crumbs all over the asparagus.
Grill for about 8 minutes over medium heat 350°F, turning a couple of times. It's easy to over cook asparagus so be diligent in watch these. I turned mine at least four times to keep them from burning. They should still have a crispness to them when you bite into them.
Dippin/sprinklin sauce
1/2 cup olive oil
2 tablespoons fresh lemon juice
2 tablespoons balsamic vinegar
1/4 teaspoon of sugar
pinch of salt, pepper and cayenne
I think you'll agree that this is as easy as it gets – betcha you can't eat just one 🙂
