Grilled Onion Rings Recipe and Videos
Here is the Grilled Onion Rings recipe I promised all of you. This video was a lot of fun for me and true to my style of cooking, you get to see it happen without any pre-cooking. Huge, crunchy, and a hint of tangy-ness make these Onion Rings a hit for my family and friends. But the best part is no deep frying!
Grilled Onion Rings Recipe
Ingredients
2 large sweet onions sliced ½ to ¾ inches thick
Coating:
1 cup Panko crumbs
1/3 cup wheat flour
1/8 cup fine ground yellow corn meal
½ tsp salt
½ tsp pepper
½ tsp thyme
1/8 tsp cumin
1/8 tsp cayenne pepper
1/8 tsp paprika
Egg Dip:
3 large eggs – beaten till blended
Seasoning bag:
1 cup self rising flour
½ tsp salt
½ tsp pepper
Also needed:
Cast iron griddle
Vegetable spray – canola or olive oil
1 gallon Ziploc bag
2 shallow bowls
Preparation
Peal, slice, and then soak sweet onions in ice water while preparing other ingredients.
In a 1 gallon Ziploc bag mix self rising flour, salt, and pepper. Bowl #1 mix eggs and bowl #2 mix coating ingredients.
Preheat your grill and griddle to 425 ° F. Take onion rings out of water, shake off excess moisture (or pat dry), place in flour bag and shake to coat. Remove from bag and dip in egg mixture to coat. Now dip in coating mix to cover completely. Spray griddle liberally with canola oil and place onion rings on griddle till griddle is full.
Spray tops of onion ring to coat – lightly, all top surfaces. Cook for approximately 10 minutes at 425 ° F. Flip onion rings and spray lightly again, cook for 10 more minutes.
Things I learned after cooking:
- Needed more salt – for my taste
- Corn meal was to coarse – changed recipe to fine ground corn meal
- Spray both sides of onion rings as you cook them – this is what turn them brown.
- Make lots!! They are so good!!
