Yukon Gold Potato Medley, Potatoes never tasted so good
This dish was inspired from … well, the top of my head. No not the top – top just the inside top! I, as almost always, created this from a few ingredients that I had and it just came out so good sharing this recipe was a must. Yukon Gold Potato Medley all came about when I decided to try the new “Man Pans” on the grill.

Ingredients
4 strips of good bacon
6 medium Yukon Gold Potatoes, sliced
1 yellow bell pepper, seeded and sliced
4 large crimini mushrooms, sliced
4 green onions, sliced
1/2 large yellow onion, sliced
salt & pepper
1 cup good quality cheddar cheese, shredded – I used Fiscalini “Bandage Wrapped Aged Cheddar”
Preparation
All of this was cooked on a barbecue grill.
Cooked bacon till crisp, removed to cool. Drain all but two tablespoons of grease (or less) add potatoes to bacon grease, add salt and pepper (to your taste – I know I should measure but I don't) and cook till tender.
This took about 40 minutes for me with the lid down and I stirred the potatoes about every 10 minutes.
In a seprate pan, heated on the grill, at about 30 minutes into the potato cooking time add the yellow bell pepper, green onion, crimini mushroom and yellow onion. I didn't add any oil to cook in as I basically wanted to just cook these slightly. The new “Man Pans” didn't require any. Another pinch or so of salt and pepper here also. I wouldn't cook the vegetables more than 8 – 10 minutes.
Now add the vegetables to the potatoes and cook for maybe ten minutes more, mixing gently. Sprinkle cheese over the top, crumble bacon and add this also. Cook till melted.
I am not sure what set this dish apart from other potato dishes that I have done. Maybe it was the grill smoke, the cheese or just the particular combination of Yukon Golds and vegetables but it was just one heck of a great dish. It looked good, smelled good and tasted even better.
You don't have to use “Man Pans”to make this dish but I sure bet they would appreciate it. Give it a try and let me know how it turned out for you!
