Foil Wrapped Asparagus Grilled on the Barbecue
As I remember, for the first 20 yrs of my life, asparagus was boiled till limp and salted to taste good. OK, it's not the best but I did like it! The next evolution for me was steamed asparagus, that was a big improvement. Steaming kept the asparagus's unique taste, some crunch and it actually retains it's original shape. I would even eat it just like that.
Around the 21st year of my exalted life I bought my first barbecue. It was a Weber 21 1/2″ kettle complete with a hardbound Weber cook book that I still have. Weber introduced me to barbecued vegetables and deserts. My neighbors and I used to have these mini barbecue one up manships every weekend. Basically, we would cook our best dish and then walk around to everyone barbecue and compare. Very serious stuff!
I have tried many different recipes for asparagus but I seem to always go back to cooking it in foil on the barbecue. Maybe old habits die hard but I really like the potency of the flavors seal in that pouch, I could make a meal of just asparagus and be quite happy. Here is an asparagus dish I cooked last night. Give it a try!
Foiled wrapped Asparagus Recipe
Ingredients:
1- bunch of asparagus, clean with the ends snapped off.
3- large mushrooms
3 – green onions, ends trimed.
3 – cloves of garlic, sliced.
2 – tbls of capers with juice.
1 – tsp of “McCormick California style Lemon Pepper.
1 – pinch of salt (optional).
1 – tbsp of olive oil
Preparation:
Lay prepared ingredients (asparagus, mushrooms, green onion) on sheet of heavy duty aluminum foil large enough to completely wrap up everything. Sprinkle capers, lemon pepper, salt and olive oil and give it a toss to mix.
Carefully fold the aluminum foil up into a pouch that will seal everything in. Seal it good, your going to have to flip this pouch in the middle of grilling it.
Throw it on a pre-heated grill (medium heat) for about 8 minutes. Give it a flip for another 8 minutes.
I decided to cook some skinless boneless chicken breast marinaded in a “Peach BBQ Sauce” as part of my meal.
Very carefully open up your foil pouch and gaze upon perfection!
Dinner is served!

Mmmmm …. I love asparagus but have never cooked it this way before -I’ll have to try it !
Ok now that looks good, I have cooked it on my gas BBQ before but just on the grate with a little salt, I will most definitely, be giving your method a shot.

Yum, I’m trying that tonight. Try this sometime, lemon juice, parmesan and cracked (barely-the coarser, the better!) black pepper, open grilled or sealed up like this recipe. Fantastic!
