Easy Cast Iron skillet breakfast.
If your ever stuck with a beautiful early morning and an empty stomach then I have a easy, tasty Cast Iron skillet breakfast treat for you. This meal is made using two techniques, charcoal and grilling. It can easily be adapted to just using your grill. I started out using coals to cook my bacon then transfered everything to the grill, worked great! Check it out:
It all starts with a Cast Iron skillet. Here I am using it with my patio table and a Lodge Lid Trivet. Theres maybe 20 briquets under the Cast Iron skillet, we need some frying power on the bottom! (Note – you could also use your side burner on your Barbecue)
A few strips of Bacon for your breakfast. This is a great time to start preparing your other ingredients! When you take your Bacon out, save some of the grease in the bottom of the pan – thats the good stuff!
Here is where you add your own ingredients. Your choice!! I choose Hash Brown potatoes, green onions, onions, garlic and parsley with a helping of salt and pepper. Mix it all together and place it into the Barbecue. 350 degrees indirect heat.
After about 20 minutes you should add your egg mixture. I made mine with 2 eggs, scrambled and some shredded Cheddar cheese. This will bake for about 10 minutes more.
It's done!! Now the hard part – deciding whether to place it on a plate or just eat it out of the skillet…..
I vote skillet – it will keep everyone else away from the leftovers.
Ah, this is one of my favorite breakfasts. I don’t use bacon, but instead use turkey sausage. The other thing you can do, is heat up some tortilla shells and make breakfast burritos out of them. They are a hit!
