Grilled Thai Garlic Chicken Recipe
Here is a quick and easy, mildly spicy Thai inspired Garlic Chicken recipe that was delicious served with rice and a Cucumber and Tomato salad.
How to make: Grilled Thai Garlic Chicken Recipe
Note: I added one red chilli to the marinade and I used whole peppercorns (I should have crushed the peppercorns before adding to food processor)
Ingredients:
6 cloves garlic crushed
1/12 tbs cracked black peppercorns
1/2 cup chopped fresh cilantro leaves and stems
1/3 cup lime juice
1 tsp brown sugar
1 tsp turmeric
2 tsp soy sauce
3 – 4 skinless boneless chicken breast
Blend Garlic, peppercorns, cilantro, lime juice, sugar, turmeric and soy sauce until smooth in a food processor or mortar and pestle. Separate the tenderloins from the fillets. Put the chicken in a shallow, non-metalic dish, add the marinade; cover and refrigerate for 2 hours or overnight, turning occasionally.
Cook the chicken on a hot, lightly oiled BBQ grill or flatplate for 4 minutes each side or until the internal temperature reaches 165° F
How to make Cucumber and Tomato salad
Ingredients:
1 small green cucumber
1 large Roma tomato
1/4 small red onion, thinly sliced
1 red or green chilli, diced
2 tbs fresh cilantro leaves
2 tbs lime juice
1 tbs fish sauce
To make the salad, halve the cucumber and scoop out the seeds with a teaspoon. Cut into slices. Halve the tomato lengthways and slice. Combine the cucumber, tomato, onion, chilli, and cilantro.
