Here is an easy and delicious Chipotle and Garlic Marinated Skirt Steak recipe perfect for Memorial Day.
Using a few simple ingredients and some inexpensive skirt steak will surprise your taste buds when grilling this steak over lump charcoal, hot and fast.
The featured ingredient in our marinade comes from McCormick Grill Mates New Chipotle and Roasted Garlic rub.
Chipotle and Garlic Marinated Skirt Steak ingredients
1/4 cup olive oil
1/4 cup red wine vinegar
2 tbs honey
1 1/2 tbs McCormick Grill Mates New Chipotle and Roasted Garlic rub
1 1/2 tbs water
Combine water and McCormick Grill Mates New Chipotle and Roasted Garlic rub, mixing thoroughly to hydrate and let sit for 15 minutes.
Combined Olive, oil red wine vinegar and honey to the hydrated McCormick Grill Mates New Chipotle and Roasted Garlic rub and mix thoroughly.
Combine marinade and your skirt steak in a shallow glass dish or a resealable bag and marinate up to four hours in the refrigerator.
Remove skirt steaks from marinade and pat dry.
Liberally sprinkle with Kosher salt.
Place your marinated skirt steaks over direct heat and Grill 3 to 4 minutes on each side until they have reached the internal temperature that you desire.
Keep in mind that skirt steaks are quite thin and cook quite fast which can result in an overcooked steak which will be tough and chewy.
I am using the Grill Dome Kamado style cooker with 100% natural mesquite lump charcoal.

That really does look good enough to eat. I have used the McCormick’s Grill Mates for a little while now. They are really good, if I say so myself. I think they have hired some of those BBQ grand masters you see at some of the BBQ cook offs and got their secret recipes.
