Foil Cookery (Cooking without Pots and Pans)

Blooming Onions

Prep Time: 45 minutes

Ingredients:

  • 4 large Vidalia onions
  • 1/4 cup butter
  • 4 cloves of garlic
  • salt and pepper, to taste

Preparation:

Peel onions and cut each one into quarters, keeping onions together. Place 1 tablespoon of butter and 1 clove of garlic in the middle of each onion. Double wrap each onion in foil and place on hot coals. Cook for 30 to 40 minutes. Carefully remove from coals and unwrap. Season with salt and pepper, then eat. You can also serve with a Ranch dip or hot sauce.

Vegetable Toss

Prep Time: 30 minutes

Ingredients:

  • 2 potatoes
  • 2 carrots
  • 1 onion
  • 1 green pepper
  • 1 red pepper
  • 1 teaspoon butter or margarine (optional)
  • garlic powder (optional)
  • hot pepper (optional)
  • black pepper (optional)
  • salt (optional)

Preparation:

Peel and slice potatoes into thin slices, about 1/4 inch thick or smaller. Peel and chop carrots into thin slices. Chop onions, or slice accordingly. Cut up green peppers and red peppers as needed. Place vegetables in layers in center of a square sheet of aluminum foil. Add butter and seasonings on top. Close foil by folding the sides over and pinching the top flaps together. Cook on coals of campfire for 20 minutes or until done. Rotate as needed.

Fried Potatoes

Prep Time: 20 minutes

Ingredients:

  • sliced potatoes, enough for 4 people
  • 1 large onion, sliced
  • 6 slices of bacon
  • salt and pepper, to taste

Preparation:

Roll out two sheets of aluminum foil large enough to hold a mound of potatoes. Lay 3 slices of bacon long ways on the foil, layer potatoes and onions, then for the last layer lay 3 slices of bacon on top. Salt and pepper each layer as you desire. Roll out two more sheets of foil unless you are using heavy duty foil, and lay over the potatoes and on all four sides roll the foil up tight. You can turn that foil over when you think the one side is done. Lay foil pack on grill or over campfire coals and cook for 20 minutes, turning occasionally. When potatoes are tender unfold foil, scope out onto a serving plate, and serve.

Chicken Fajitas

Prep Time: 10 minutes

Ingredients:

  • 3 pounds of grilled chicken
  • 2 bell peppers, 1 red and 1 green, sliced
  • 2 onions sliced
  • 1 package fajita seasoning mix
  • 12 fajitia size tortillas
  • aluminum foil

Preparation:

Make desired amount of foil pouches, 1 per person. Inside each pouch place a handful of peppers, chicken and onion. Make fajita mix in a bowl, and when dissolved pour equally into the foil packs. Seal the foil so it will not leak. Place on warm coals until hot. Serve with tortillas.

Pineapple Chicken

Prep Time: 45 minutes

Ingredients:

  • 4 skinless chicken breasts
  • 1/4 cup catsup
  • 2 tablespoons cider vinegar
  • 2 tablespoons brown sugar
  • 1 small can pineapple chunks, drained
  • 1 green bell pepper, chopped
  • 1 small sweet onion, chopped
  • salt and pepper, to taste

Preparation:

Make the sauce first. You can make this ahead of time at home and bring it to the campground in a container in your cooler. First, chop the pepper and onion into big chunks. Then mix all ingredients (except the chicken) in a sauce pan and bring to a slow simmer stirring occasionally.

Next tear off a piece of foil big enough to wrap each chicken breast. Spoon some sauce onto each piece of foil, place a chicken breast on top, and spoon more sauce over each breast. Salt and pepper to taste. Wrap foil tightly and cook for 30-40 minutes over campfire coals or on the grill. Turn occasionally.

Hamburger Casserole

Prep Time: 1 hours,

Ingredients:

  • 4 large potatoes, sliced
  • 1 bag frozen mixed vegetables
  • 2 pounds lean hamburger, uncooked
  • 1 large onion, chopped
  • salt and pepper, to taste
  • 2 cans mushroom soup, undiluted

Preparation:

Layer ingredients in order given into a foil roasting pan. I just break up the hamburger and spread it evenly over vegetables. Cover the pan with foil. You can put it in your oven or on the grill over coals. Cook until hamburger is done, about 45 minutes to an hour.

Hobo Dinner

Prep Time: 30 minutes

Ingredients:

  • 2 pounds ground beef
  • 1 medium potato per person
  • 2 cans corn or any of your favorite vegetables
  • Lawry's Seasoned Salt
  • butter
  • salt and pepper

Preparation:

Make hamburger patties ahead of time at home, then place them in a baggie or wrap in foil, and store them in your cooler. At the campground, tear one sheet of heavy duty foil for each person, about 14 inches long. Place a hamburger patty in center of foil, season with Lawry's, and salt and pepper to taste. Peel potatoes, slice thin or cut into small cubes, and place over meat. Season potatoes too. Add a pat of butter. Place vegetable next to the meat and potatoes. Bring foil ends up and fold over until 2-3 inches from meat, and then fold up each side in the same manner. Place over the fire or grill.

After 15 minutes, carefully remove with tongs and open each foil pack being careful because they are full of very hot steam. Cut into hamburger to check for doneness.

This can be made at home too. Use a 350 degree oven, place foil packs on a cookie sheet, and bake for 30 minutes.

Cabbage and Smoked Sausage

Ingredients:

  • 1 large head cabbage, cut in 1″ pieces
  • 1 pound smoked sausage, cut in 1/4″ slices
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 5 large potatoes, cut in 1″ pieces
  • 2 large carrots, cut in 1/4″ slices
  • 1 stick butter
  • 6 slices American cheese
  • salt and pepper to taste

Preparation:

Combine all ingredients and wrap in a large sheet of aluminum foil. Fold to seal all ends. Place on rack over medium heat for one hour, or until tender.

Apple Surprise

Prep Time: 15 minutes

Ingredients:

  • 3 – 4 apples
  • shelled walnuts
  • butter or maple syrup

Preparation:

Cut apples into slices and take out core. Place apples on aluminum foil. Add walnuts and butter or maple syrup. Fold foil leaving an opening for ventilation. Place on campfire and cook at least 45 minutes, or until apples are soft, not mushy.

Trout with butter and onions

Prep Time: 10 minutes

Ingredients:

  • fresh trout, any kind
  • 1 tablespoon butter
  • salt and pepper
  • 1 small onion, sliced

Preparation:

Clean the fish. Leaving the fish whole, stuff the insides with butter, salt and pepper, and as many onions as will fit. Place stuffed trout on buttered foil and wrap up. Place over fire for 7-10 minutes. Open the foil pack, peel the skin off, and enjoy.
