I was recently invited to take on the Outdoor Gourmet “Planksgiving” competition, a friendly plank grilling recipe competition amongst some of the finest Outdoor Cooking food bloggers out there, of course I accepted!
Who is Outdoor Gourmet?

A Little History
Grilling on cedar is a classic cooking technique in the Northwest. It was created and perfected by the peoples of the Pacific Northwest coast during the yearly salmon runs. When European settlers arrived, they liked scrumptious cedar grilled salmon too, so they adopted the practice of grilling on cedar shingles. Today, we draw inspiration for the shape of our modern grilling planks from 19th century cedar shingles.
Manufacturer and Wholesaler
We are a small family-owned and operated manufacturer and wholesaler. We offer our most popular sized grilling planks as bulk seconds at a deeply discounted price. All of our material is sourced, and our products are 100% made in the USA. All phases of manufacturing take place at our Sandpoint, ID facility. We use only food-grade lubricants in all of our machinery to ensure the highest standards of food safety. Local manufacturing and control also ensures that our organic grilling planks are 100% pure.
Sustainably Produced
Our mill and offices are located in the heart of Western Red Cedar's botanical range, in Sandpoint, Idaho. The environmental cost of obtaining and transporting our raw material, measured in fossil fuel consumption, is very low. Instead of cutting down trees, we recycle second-grade pieces from local suppliers that purchase lumber from sustainable sources.
They were kind enough to send me a couple of their special grilling planks at no charge for this competition and I choose a Maple Grilling Plank to create my recipe on.
Orange Glazed Planked Chicken Breasts
There are only a few simple steps to making these delicious Orange Glazed Planked Chicken Breasts:
Ingredients
3 skinless boneless chicken breast
2 oranges
1 Outdoor Gourmet Maple Grilling Plank
Marinade
1/4c fresh squeezed orange juice
1/4 c Four Roses Single Barrel Kentucky Bourbon
1/4 c pineapple juice
1 clove garlic, minced
1 green onion, thinly sliced
Glaze
1 c orange marmalade
1 clove garlic, minced
1 green onion, thinly sliced
1 tbs dried onion flakes
1 tsp McCormick Firey 5 Pepper seasoning
Step 1
Soak your plank for at least 1 hour. I used water but you could certainly substitute a juice for this recipe.
Step 2
Prepare marinade & glaze
Combine ingredients and marinade 3 -4 skinless boneless chicken breasts for 1 hour
Combine ingredients and set aside.
Step 3
Prepare charcoal grill for 2 zone grilling
Step 4
Grill marinaded skinless boneless chicken breasts on the presentation side for 3 – 4 minutes to sear in grill marks.
Step 5
Slice 1 orange thinly, place slices on maple plank and place chicken on orange slices grill marked side facing up.
Place plank on cool zone of grill for indirect grilling.
Add glaze to cover the chicken breast.
Step 6
Grill until the internal temperature of the chicken breast reaches 165° F
